Pumpkin Spice Pecan Dump Cake
You know you’ve been busy when you realize it’s the end of the November and you haven’t baked a pumpkin anything. By this time last year, I was knee-deep in Pumpkin Spice Dip, Chunky Pumpkin Chocolate Bites and that delicious liquid known as Pumpkin Spice Latte. I can’t totally blame my lack of baking on my busy schedule but I can tell you that my weight loss surgery has affected what I bake, and eat.
When eaten in moderation, this Pumpkin Spice Pecan Dump cake is a true delight. Side note: I can’t believe I just said pumpkin and moderation in the same sentence. LOL Anyway, the drizzled butter applied before baking makes this dessert a cross between a pie and cake. It’s moist, rich, and bursting with pumpkin spice flavor.

Let me tell you a secret. Well, two secrets really. One, this cake recipe has been around forever so I have no idea who created the original. Two, I snuck a bite. Someone had to taste it to make sure it turned out okay. Sigh. The sacrifices I make for my family. 😉
