Hearty + Easy Minestrone Soup Recipe

Minestrone (/ˌmɪnɪsˈtroʊni/; Italian: [mineˈstroːne]) is a thick soup of Italian origin made with vegetables, often with the addition of pasta or rice, sometimes both. Common ingredients include beans, onions, celery, carrots, stock, and tomatoes. There is no set recipe for minestrone since it is usually made of whatever vegetables are in season. It can be vegetarian, contain meat, or contain a meat-based broth (such as chicken stock).
In our minestrone soup recipe, we combine the healthy benefits of cannellini beans with the flavors of garlic, thyme, rosemary, and oregano and simmer in a vegetable broth with celery, tomatoes, onions, and arugula (optional).
When all of the flavors merge and mingle in the pot you end up with a tasty bowl of comfort food. Add the fusilli pasta and you end up with a hearty bowl of yum that’s perfect for a cold night.
Add a salad and a loaf of bread and you’ve got a delicious dinner that tastes like you spent hours slaving over a hot stove. But between you and me, you’ll only spend about fifteen minutes over a hot stove. If you can dice, slice, measure, and cook pasta, you’ve got this.
