Boost Your Protein Intake With These No Bake Peanut Butter Protein Bites
Since my weight loss surgery in June 2017, a lot of things have changed. The most exciting change? I’ve lost eighty pounds (80!). Of course, the weight loss can be attributed to eating smaller portions, making smarter food choices, and exercise. Gone are the days of eating whatever I want when I want. Currently, I aim for 5 to 6 small meals a day that contains 60+ grams of protein. Anything less than 60 is considered a no-no.
Store-bought protein snacks can contain a lot of junk that isn’t good for someone trying to eat healthy. Have you seen what’s in granola bars these days?? A lot of sugar, unhealthy fats, and artificial preservatives. No thank you. By making my own snacks, I can control what I’m eating by making sure I use the healthiest ingredients I can afford.
While these Peanut Butter Protein Bites aren’t perfect, they’re pretty darn close. I used honey instead of sugar, incorporated high protein whey powder (to help meet my daily protein goal) and I used organic flax-seed and unsweetened natural coconut (both of which are full of antioxidants).
If you’re wondering why I used such large coconut flakes, it’s because it adds some crunch to the protein bites. In addition, that crunch helps me slow down my eating. When I eat slower, the hunger signal between my brain and stomach has a chance to fire accordingly and tell me when I’m full. As a result, I’m less likely to overeat.
Note: If you’d like smaller coconut flakes, grind them up in a food processor.
The chocolate chips in the protein bites add a touch of chocolatey goodness without going overboard. I only used 1/4 cup but you can certainly add more or less to your liking.
This recipe makes about 16 protein bites but you can double it and freeze half. If refrigerated in an airtight container, the protein bites are good for about 10 days. After that, they get too hard and start to taste like stale fridge air. 😉
They truly are delicious and a great way to boost your protein intake.
